Cranberry Nut bars

This is a yummy alternative to all the rich deserts of the season. It is a little healthier than the others too. The fruit and healthy fat from the nuts makes this a nutritious treat. These are a great make ahead gift that store just as easily as other cookies.

2 eggs

1 cup sugar

1 cup flour

1/3 cup melted butter

1 ¼ cups fresh cranberries

½ cup chopped walnuts

Preheat oven to 350 degrees. Grease an 8 inch baking pan. Beat eggs until thick; gradually add sugar until thoroughly blended. Stir in flour and melted butter, mix well. Add cranberries and walnuts mix until just combined. Pour in pan and bake for 40-45 minutes or until golden brown and a toothpick inserted in the middle comes out clean. Cool completely and cut into bars. Recipe from Ocean Spray.

This is simple and if you follow my site you’ll notice it is the same as my stain remover. I was scrubbing a stain and noticed that it made my rings really shiny so I cleaned them with it and a tooth brush and wow did it make them sparkle.

Ingredients:

2 tablespoons peroxide

½ teaspoon baking soda

2 tablespoons Dish soap.

Combine and let set covered overnight, makes a gel then apply to stain with a tooth brush and wash like normal. I make this in an old baby food jar and find that it is the perfect size.

Homemade Peanut Butter Chocolates

Great gift for those Reese’s cup loves in your life, and so very easy. Once these have set and are hard pop them out of the muffin liners and put them in a pretty tin, fill a coffee cup or a pretty candy dish with them. This is great to have the kids help with because there is no stove involved. If you like these recipes feel free to share them.

1 10-12 oz. package vanilla or white chocolate chips

6 oz. or 1 cup semisweet chocolate chips

1 cup creamy peanut butter

2 tablespoons butter flavored shortening (real butter would work too)

Microwave all ingredients on high for 1 and ½ minutes, stir, return to microwave for 30 more seconds or until all ingredients are melted and smooth. Pour into miniature muffin tins with paper liners, refrigerate until set.

For best results do not use reduced fat or generic peanut butter I personally favor Smucker’s all natural creamy peanut butter.

“This was given me by the wife of my first beau, when they visited us years ago!  She used persimmon pulp, I’ve tried banana and applesauce.” (LHC)

½ cup Butter

1 cup Sugar

2 Eggs

1 tsp Baking soda

1 cup Fruit pulp (banana, applesauce, etc.)

2 cups flour

½ tsp Salt

½ tsp Cloves

½ tsp Cinnamon

½ tsp Nutmeg

1 cup Raisins

1 cup or less Nutmeats

Cream butter and sugar

Add eggs and mix well

Dissolve soda in fruit pulp and add to creamed mix

Sift dry ingredient mix into creamed mix along with raisins and stir

Drop by tsp on greased cookie sheet

Bake at 350 for 10 – 12 min.

Mom’s Pumpkin Pie

Mom’s Pumpkin Pie

3 eggs beaten

2 cups pumpkin or butternut squash puree

¾ cup brown sugar

½ teaspoon salt (we use sea salt)

1 teaspoon Cinnamon

½ teaspoon ginger

¼ teaspoon ground cloves

1 2/3 cups evaporated milk (Or 1 2/3 cups milk and 1 tablespoon cornstarch)

Mix dry ingredients, mix separately pumpkin and eggs, add dry ingredients to egg mixture.  Pour into pie crust and bake on bottom rack at 350 for 35 min or until middle is set.

1 29 oz can Pumpkin pie mix        [use 29 oz plain Pumpkin (no MSG)]

1 5 oz can Evaporated Milk

3 Eggs lightly beaten

1 cup Sugar         [1 cup too sweet – use up to 1/3 cup Brown Sugar]

½ tsp Salt             [1 ½ tsp]

2 tsp (up to) Cinnamon  [use ¾ tsp nutmeg, 1 tsp ginger, ¼ tsp mace]

Line 9 x 14 pan with wax paper

Mix above together

Pour into pan

1 pkg Yellow cake mix with pudding in mix

1 cup chopped Nuts

½ lb butter or margarine

Sprinkle cake mix over the top

Distribute nuts over cake mix

Drizzle melted butter overall

Bake at 350 for 65 – 75 min.

Chill

Invert and cut into bars.  Small bars can be eaten with fingers.  Larger bars can be served on a plate, topped with a dollop of whipped cream.

Muffins – Blueberry

1 ¾ cup Flour

1/2  cup Sugar

2 tsp Baking powder

½ tsp Salt

1 Egg

¾ cup Milk

1/3 cup real butter (salted or unsalted)

1 cup Blue Berries

Bake at 400 for 20 – 25 min.

Makes 12

Pecan crusted chicken

2 boneless skinless chicken breast cut in ½ width wise

½ cup maple syrup (can use pancake syrup but not quite as good)

½ cup plain bread crumbs

½ cup chopped pecans

Salt and pepper to taste

Veggie oil to cook in.

Mix bread crumbs with pecans, salt and pepper, cover chicken breast with syrup press into pecan mixture turn over and repeat. Fry until golden brown and turning once be sure chicken is cooked all the way through. (I cut in half at the thickest point and make sure it is all done) that’s it great with baked sweet potatoes and a veggie. This is an impressive meal to serve guest and easy too.

2 ½         5              cups Apples – peeled and sliced

2 ½         5              cups Cranberries

5/8         1 ¼         cups Brown sugar packed

1/3         2/3         cup Flour

½             1              tsp ground Ginger

½             1              tsp Nutmeg

<¼          <½          tsp Mace

Combine above

Pour into pastry lined pie plate

Add cover crust and slit

Place on cookie sheet (to catch any drippings)

Bake at 400 for 15 min.

Bake at 350 for another 45 min.

6 Tbsp   Butter

½ cup Sugar

¼ tsp Salt

1 cup Flour

Cream butter, sugar, salt – beating until fluffy

Add flour

Put dough in bottom of 8 x 8 x 2 pan

Bake at 350 for 15 min.

 

In meantime:

2 Eggs beaten

¾ cup Sugar

2 Tbsp Flour

¼ tsp zest of Lemon

3 Tbsp Lemon Juice

¼ tsp Baking Powder

Beat 3 minutes

Pour over baked layer

Bake at 350 for 25 – 30 min. more

Cool

Cut into squares
