Homemade Pizza

Pizza completely from scratch.

Yesterday for dinner I made pizza completely from scratch. I used pasta sauce I had made from scratch and canned a few weeks ago and found a recipe in my new cookbook (Simply in Season) for a whole wheat pizza crust.

1 heaping active dry yeast

1 and ¼ cups warm water

Stir together in a large bowl until yeast is dissolved.

2 cups all-purpose flour

1 cup whole wheat flour

1 teaspoon salt

Add enough flour to make soft dough. Knead for 8 – 10 minutes, I found 8 min to be enough. Place in a greased bowl, turn to grease both sides, cover with a damp dish cloth and let rise until double in size. I found that you should use a clean bowl for letting the dough rise, when I used the mixing bowl the dough didn’t rise as much. Let dough rise 45 – 55 min, my house is approx. 75 degrees and it took 45 min. Generously grease cookie sheet or pizza stone with olive oil. Roll or press dough into the pan in the shape you want it. Top with sauce and your favorite toppings and cheese. Bake the pizza in a 400 degree oven for 15 – 20 min or until cheese is melted and slightly browned.

I made two pizzas because my husband prefers only pepperoni and cheese and I want all the veggies on mine. What I learned is that one batch makes a nice thick crust, good for me but my husband prefers it to be thinner.  Next time I will use ½ the dough and try to roll it out thinner.

  1. This recipe for dough looks good. I am going to buy some whole wheat flour and give it a try. I take it you don’t use packaged yeast. Do you buy it in the jar? I always use the packaged kind because I don’t use yeast that often. Do you know how long it stays good when you use the kind in the jar?

    1. Whole wheat flour, don’t buy Hodgson Mill old fashioned whole wheat flour, it’s not milled as fine as others and is hard to bake with. I prefer Gold Medal whole wheat flour not only is it easy to work with it comes with yummy recopies on the back. Yeast yes I bought the jar, It’s cheap less than 2 dollars I think, needs to be refrigerated after opening and says it’s good for 4 months. You do a lot of baking for the holidays so I think it would be ok to buy the jar.
